Strawberry Shortcake

Anxious to try out my new Hummingbird Bakery cook book, I decided to make these strawberry shortcake cupcakes.These not-too-sweet treats are topped with cream cheese frosting and graham cracker crumbs. The recipe called for freshly chopped strawberries to be placed at the bottom of each cupcake liner. Unfortunately, they came out a little soggy on the bottom, so next time I'll mix the strawberries into the batter instead. Nevertheless, they were delicious!
